INGREDIENTS
1 pint fresh cranberries (about 2 cups)
2/3 cup white sugar
2 ripe Asian pears or other pears, cored and diced (peel is optional)
1 teaspoon lemon zest
1/3 cup orange juice
PREPARATION
- Cook cranberries and sugar over medium heat until cranberries start to burst open, about 10 minutes.
- Add diced pears, lemon zest, and orange juice. Cook until pears are tender, but don’t overcook, about 5–8 minutes. Stir occasionally so sauce doesn’t burn.
- When finished, let sauce cool, and store it in a sealed container in the refrigerator (use within a week or so). Serve chilled.
Serves 4–6; Prep time, 10 minutes; cook time, 15–20 minutes.
Cook’s note: Substituting fresh minced ginger in place of the lemon zest would be a delicious twist! This sauce pairs well with roast chicken or pork and is great on a sandwich or stirred into yogurt.
